On a whim, I put a couple of slices of Halloumi in the waffle iron, and I'll be doing it again (1-2 minutes less cooking time)! They're crispy on the outside and cheesy chewy on the inside. Each bite of Halloumi Waffles on Purple Slaw with Preserved Meyer Lemon, Apples, Castelveltrano Olives and Tahini is a flavor party 🎉in your mouth. I tossed shredded red cabbage with olive oil, lemon, sea salt and fresh ground pepper and topped it with sliced crispy apples, olives (choose your fav), preserved Meyer lemon and the halloumi waffles. Drizzled on this bowlful is a delicious (and addictive) lemony tahini dressing (recipe below) and a sprinkle of Gomasio. Someone was happy when she came home from school! .
Lemony Tahini Dressing
1/4 cup tahini
Juice of one lemon
1/2 tsp sea salt (or to taste)
1 clove garlic crushed (optional)
Lots of fresh ground pepper
Water to achieve desired consistency- about 1/4 cup (if tahini is very thick, use warm water). Whisk together and enjoy (on everything)!
