I began cooking as a child and feeding family and friends has always been my passion. My kitchen is a busy one. I love to experiment and embrace the kitchen successes along with the accidents. I love to cook and collaborate with friends. I am seasonally driven (I love the farmer's market!), avoid processed foods and focus on whole and organic (mostly plant-based, but not exclusively) choices. In my home, my family has a variety of eating preferences from plant-based, gluten free, refined sugar free to full on omnivore. My goal is to create dishes to please all, either as is or with minor adjustments to the recipe. Where did "Feed the Swimmers" come from? When my kids began swimming competitively and growing into young adults, I realized, even more, how important nutrition is to performance, growth and overall health and emotional well being. Everyone (including the coach during travel meets) would ask "what are you feeding the swimmers?" This has become my mantra whenever I'm in my kitchen cooking for family and the friends I love.

Honey Skyr Popsicles with Roasted Balsamic Strawberries

Popsicles are the most fun way to beat the heat, and why not add a little extra nutrition and flavor! I was originally planning on making these with Greek yogurt (which would be equally wonderful), but really wanted the tang to shine through so Skyr was the answer and plays off of the honey beautifully!

Method~ 

Honey Skyr Popsicles with Roasted Strawberries:

1 cup Skyr

1/4 cup creamed honey

1/2 tsp vanilla

1-2 pints strawberries (you may want to have extra!)

2 tsp turbinado sugar

1 Tbs syrupy balsamic vinegar

Pinch of fresh fine ground pepper (optional)

Preheat oven to 350F

Trim strawberries and toss with sugar and place on a parchment lined baking sheet. Bake for 20 minutes.

Transfer to a bowl, catching all of juices and toss with balsamic vinegar and pepper. Fork mash so you still have small chunks.

In a high speed blender, blend Skyr with honey and vanilla and process for about 3 full minutes.

Fill Popsicle molds halfway with Skyr mixture and stir in 1-2 Tbs strawberry mixture. Top off with more yogurt allowing about 3mm of space for expansion. Freeze 4 hours or overnight.
